Quinoa (pronounced KEEN-wah) is a grain-like seed that is native to the Andean region of South America. It has become increasingly popular as a health food in recent years due to its high nutrient content and versatility in cooking.

Quinoa is a good source of protein, fiber, and essential amino acids, making it a popular choice for vegetarians and vegans. It is also gluten-free, which makes it a great option for those with gluten intolerance or celiac disease.

Quinoa can be used in a variety of dishes, such as salads, soups, stir-fries, and even desserts. It has a slightly nutty flavor and a texture that is similar to rice or couscous.

QUINOA STUFFED BELL PEPPERS

Ingredients:

  • 4 medium bell peppers
  • 1 cup quinoa, rinsed and drained
  • 2 cups water or vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup mushrooms, chopped
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and black pepper, to taste
  • 1/2 cup grated Parmesan cheese

Instructions:

  1. Preheat the oven to 375°F.
  2. Cut off the tops of the bell peppers and remove the seeds and membranes. Place them in a baking dish.
  3. In a medium saucepan, combine the quinoa and water or broth. Bring to a boil, then reduce heat to low and simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed.
  4. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  5. Add the zucchini and mushrooms, and sauté for a few more minutes, or until the vegetables are tender.
  6. Stir in the diced tomatoes, oregano, basil, salt, and black pepper. Cook for a few more minutes to allow the flavors to blend.
  7. Add the cooked quinoa to the skillet and mix well.
  8. Spoon the quinoa mixture into the bell peppers, filling them to the top. Sprinkle the Parmesan cheese on top.
  9. Cover the baking dish with foil and bake for 30-40 minutes, or until the bell peppers are tender and the cheese is melted and bubbly.
