QUINOA STUFFED BELL PEPPERS
Ingredients:
- 4 medium bell peppers
- 1 cup quinoa, rinsed and drained
- 2 cups water or vegetable broth
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 cup mushrooms, chopped
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and black pepper, to taste
- 1/2 cup grated Parmesan cheese
Instructions:
- Preheat the oven to 375°F.
- Cut off the tops of the bell peppers and remove the seeds and membranes. Place them in a baking dish.
- In a medium saucepan, combine the quinoa and water or broth. Bring to a boil, then reduce heat to low and simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
- Add the zucchini and mushrooms, and sauté for a few more minutes, or until the vegetables are tender.
- Stir in the diced tomatoes, oregano, basil, salt, and black pepper. Cook for a few more minutes to allow the flavors to blend.
- Add the cooked quinoa to the skillet and mix well.
- Spoon the quinoa mixture into the bell peppers, filling them to the top. Sprinkle the Parmesan cheese on top.
- Cover the baking dish with foil and bake for 30-40 minutes, or until the bell peppers are tender and the cheese is melted and bubbly.
